Eating right is very important. One wrong food can cause a havoc in your stomach during the season. While drinking lots and lots of water will help in keeping the body hydrated, there also some foods which can help in keeping your metabolism right.

Here are some flavourful and healthy salad recipes which you can include in your daily diet on these warmer days.

1. Summer Fruit Salad

Ingredients: 2/3 cup fresh orange juice, 1/3 cup fresh lemon juice, 1/3 cup brown sugar, 1/2 teaspoon grated orange zest, 1/2 teaspoon grated lemon zest, 1 teaspoon vanilla extract, 2 cups cubed pineapple, 2 cups strawberries hulled and sliced, 3 kiwis peeled and sliced, 3 bananas sliced, 2 oranges peeled and sectioned, 1 cup seedless grapes, 2 cups blueberries

Procedure: Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a pan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened for about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.

Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

 

2. Leafy Salad with Walnuts

Ingredients: Leafy vegetables (lettuce, chinese cabbage), Walnuts (grounded), Walnut oil, Sherry vinegar, Cherry tomatoes, Salt

Procedure: Mix the leafy vegetables and the cherry tomatoes with the ground walnuts in a glass bowl. Add the walnut oil and the sherry vinegar to the salad and mix well and serve.

 

3. Mixed Bean Salad

Ingredients: 1 can black beans, 1 can kidney beans, 1 can cannellini beans, 1 green bell pepper, chopped, 1 red bell pepper chopped, 1 packet frozen corn kernels, 1 red onion chopped, 1/2 cup olive oil, 1/2 cup red wine vinegar and 2 tablespoons fresh lime juice, 1 tablespoon lemon juice, 2 tablespoons white sugar, 1 tablespoon salt, 1 clove crushed garlic,  1/4 cup chopped fresh cilantro, 1/2 tablespoon ground cumin, 1/2 tablespoon ground black pepper, 1 dash hot pepper sauce, 1/2 teaspoon chili powder

Procedure: In a large bowl, combine beans, frozen corn, bell peppers and red onion. In another small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season with hot sauce and chili powder. Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.

 

4. Chickpea Salad With Raw Mango

Ingredients: 1 cup boiled chickpeas, 1/4 cup finely chopped raw mango, 1 small tomato, 2 green chillies, 1 tbsp grated carrot, 1/2 tsp pepper powder, 1 1/2 tsp chaat masala powder, 2 tsp lemon juice, Salt to taste

Procedure: Soak chickpeas in water overnight and pressure cook them the next day till they turn soft and drain the water. Peel and chop the raw mango finely. Chop tomato finely. De-seed and chop green chilli roughly. In a bowl, add lemon juice, salt, pepper powder and chaat masala powder and mix well. Toss in boiled chickpeas, raw mango, green chillies, tomato and mix well. Garnish with grated carrots.
